- 1 tbsp Baking Powder
- 1.5 Cups Banana(s)
- 1.5 Cups Blueberries
- 1/2 Cups Margarine
- 1.5 Cups Flour
- 1 Cups Large Egg
- 1 tsp Salt
- 2 tsp Vanilla Extract
- 1/4 Cups White Sugar
- Coat Blueberries in 1 TBSP of Flour, set aside
- Mash Bananas
- Preheat Oven to 375 F - spray muffin pan with Pam if not using liners.
- Wisk dry ingredients together
- in separate bowl combine Bananas, Sugar (optional), melted butter, egg & vanilla.
- Add dry ingredients to wet, mis JUST UNTIL COMBINED. Do not over mix
- Fold in Blueberries
- Scope into muffin tin evenly
- Bake 18-20 mins, or until tooth pick comes out clean
Store at room temperature for 4-5days
