- 3 lbs Baking potatoes
- 4 Cloves Garlic
- 1/2 Cups Olive Oil
- 1.5 tsp Oregano, dried
- 1/2 Cups Chicken stock
- to taste Ground Pepper
- 1.5 tbsp Lemon juice
Preheat oven to 400°F.
Place the potatoes in a a bowl, cover in oil and add the garlic, dried oregano, salt and pepper to taste. Toss well to coat with the oil.
Arrange on 13x9" baking dish in a single layer or in any high sided pan.
Bake the potatoes for 15 minutes.
Mix the stock & lemon juice.
Add the remainder of ingredients to potatoes, toss, and bake for 15 minutes or until all absorbed by potatoes. If you need more time to make sure the potatoes are soft, add a little more stock.
Alternatively can be done on the BBQ in a large foil pan.
